Most garages around here were handed over with the studs showing. Finishing one is a fast, high-value project: the space gets dramatically brighter once there are white walls to bounce light, it holds heat better, and it stops being the room you apologize for.

Garages also carry a code requirement that living space does not. The wall and ceiling assembly separating an attached garage from the house needs fire-rated board, and we hang the correct product there as a matter of course. Beyond that it is your call how far to take the finish — taped and ready for paint is plenty for most, and a smooth finish is there if the garage is becoming a gym, shop, or hangout.
